I told you a while back, when I posted about Pumpkin Scones, that I tend to have a lot of leftover pumpkin sitting in the fridge this time of year. Reason being...I don't bake pumpkin pies.
I don't really care for them - although I will always have one slice every year just to make sure that I still don't really care for them.

But I loooove almost everything else made out of pumpkin puree.
So I always make sure to buy a can every fall and bake up a few things...and then I'm scrambling to find more things to make before the rest goes moldly.
Lovely, I know...talking about mold and offering a recipe in the same paragraph.
Well, these cookies tend to be my go-to after I've made my scones.
They are simply delicious.
Nuff said.
Iced Pumpkin Cookies
(original recipe from allrecipes.com)
2 1/2 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 tsp. vanilla extract
Icing:
2 cups icing sugar
3 Tbsp. milk
1 Tbsp. melted butter
1 tsp. vanilla extract
(I always cut the icing recipe in half)
Preheat oven to 350 F. Combine flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg and 1 tsp. vanilla to butter mixture and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven.
Cool cookies, then drizzle glaze with fork.
To make the glaze:
Combine icing sugar, milk, 1 Tbsp. melted butter and 1 tsp. vanilla.
Add milk as needed, to achieve drizzling consistency.
Mmm.
Enjoy.
These cookies went to feed hungry men at my hubby's workplace.
