Use Up That Leftover Pumpkin!

I told you a while back, when I posted about Pumpkin Scones, that I tend to have a lot of leftover pumpkin sitting in the fridge this time of year. Reason being...I don't bake pumpkin pies.
I don't really care for them - although I will always have one slice every year just to make sure that I still don't really care for them.
But I loooove almost everything else made out of pumpkin puree.
So I always make sure to buy a can every fall and bake up a few things...and then I'm scrambling to find more things to make before the rest goes moldly.
Lovely, I know...talking about mold and offering a recipe in the same paragraph.

Well, these cookies tend to be my go-to after I've made my scones.
They are simply delicious.
Nuff said.


Iced Pumpkin Cookies
(original recipe from allrecipes.com)

2 1/2 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1/2 cup butter, softened
1 1/2 cups white sugar
1 cup canned pumpkin puree
1 egg
1 tsp. vanilla extract

Icing:
2 cups icing sugar
3 Tbsp. milk
1 Tbsp. melted butter
1 tsp. vanilla extract
(I always cut the icing recipe in half)

Preheat oven to 350 F. Combine flour, baking powder, baking soda, cinnamon, nutmeg and salt; set aside.
In a medium bowl, cream together the 1/2 cup of butter and white sugar. Add pumpkin, egg and 1 tsp. vanilla to butter mixture and beat until creamy. Mix in dry ingredients. Drop on cookie sheet by tablespoonfuls; flatten slightly.
Bake for 15 to 20 minutes in the preheated oven. 


Cool cookies, then drizzle glaze with fork.
To make the glaze:
Combine icing sugar, milk, 1 Tbsp. melted butter and 1 tsp. vanilla.
Add milk as needed, to achieve drizzling consistency.



Mmm.

These cookies went to feed hungry men at my hubby's workplace.
I've been kicking myself ever since...I only got to eat one.stinking.cookie.

(The cookies don't actually stink, by the way)
(Hubby refuses to bring cookies to work in a silver basket, also by the way)

  2. I am so with you on the pumpkin pie! I've always thought it was weird because I pretty much devour anything else made with pumpkin... and probably these cookies will be added to that list!
